My husband and I are moving to Seattle this summer (probably in July), and we're currently looking for any buildings that allow more than 2 pets. While I've found plenty of apartments that allow 2, most say a maximum of 2. We have 3 cats and getting rid of 1 just isn't an option.

Ultimately, we're looking for a 1bd in downtown, lower queen anne, belltown, capitol hill or the international district under $1500. We're expecting to pay an extra deposit (or 3) for them.

Does anybody know of any buildings which are more flexible about their 2 pet policies?

Hi, my dad and I are moving to Tacoma and we have three cats, I don't know if you've moved yet, if you have I'd love to know your solution, if you haven't moved and we find a solution we'll be sure to let you know,

3 cats is a lot for a one bedroom place.

I can see why you're having difficulty finding a place that will allow that.

You might find more flexibility with someone renting out a single-family home (though it will probably be out of your price range) or maybe someone who is renting out their condo (so you'd be dealing with a private owner, instead of an apartment management company, and in my experience, private owners tend to be more willing to work with you instead of just having a set of absolute rules).
