I would never go to Cancun, too much of a disneyland type tourist experience. I don't like heavy gringo touristy areas. If I went to a Mexico beach I'd look at Zihuatanejo, Puerto Escondido down that way. The water is way warmer down there for swimming then Puerto Vallarta, more tropical feel. There may be some more off the beaten track places in the Yucatan. Bocas del Toras down in Panama looks really cool for Caribbean type water, super white sand and a lush tropical feel.

NorCal and the Sierra foothills, only a day's drive from Seattle. Like right now where it's 47 degrees and raining in Seattle, the temperature in nearby Chico is ~ 64 degrees, dry and sunny!!

Interesting count on the Big Island. That's my favorite too, outside of the US mainland. I prefer Hilo for its greenery. It's the third rainiest city in the US but Seattleites will barely notice. It's always been sunny when I'm there, with downpours at night. When you want desert-y and dry you just go to the other side of the island.
