So most everything I've read about Seattle praises the stunning nature, and all the nature- and outdoor-related activities that go with it.
That's all fine and dandy, I get it, but, I'll just go ahead and say it - active outdoor stuff is not really our cup of tea. A relaxed hike or a nice nature stroll, that's as far as we go.

Now, with that in mind, who can tell me about the NON-nature-related places to check out in Seattle?

We're moving in a few weeks and will stay on the Eastside but plan to foray into the city to check it out. Me and DH both love cities, we like wandering around and people watching, so I want to hear about specific parts/blocks/streets of the city, aside from Pike's Market, that are great for that. Cute streets, people walking around, little cozy cafes, neighbourhood markets, things like that. It needs to be safe too and we'll have our four year old in tow most of the time, so let me know which places to stay away from, as well as great parks and kid-friendly areas

We lived in Vancouver before this and we LOVED the downtown for that - the West End, Yaletown, Gastown, all these wonderful places to walk around. We really missed it here in the Bay Area, because even when we would venture out to San Francisco, it was just way too insane with driving and parking, extremely chaotic, crowded with tourists, gritty and dirty feeling in many parts, just not a relaxing experience at all. I'm hoping Seattle will be a bit more chill while still having some cute urban parts to experience - right? right? It's not ALL grunge and dive bars?

Bars and music venues in Belltown, Ballard Market on weekends in Ballard, Pike/Pine district in Captiol Hill, and various places in and around downtown.

Check out Lower Queen Anne, Upper Queen Anne, Pike/Pine in Capitol Hill, Broadway in Capitol Hill (btw John and Roy), Old Ballard (you'd love this area based on your description), Fremont, Wallingford, Phinney Ridge/Greenwood (btw. 62nd and 85th), Columbia City, University District ("The Ave") for starters.

I'll second Old Ballard/Market St. It's got all the quaint stores, and there's lots of kids around. 15th Avenue East on Capitol Hill is another cool urban neighborhood, and the Junction in West Seattle( Alaska St and California Ave) as well as Alki in West Seattle.

Check out Columbia City for dinner. Once a not so nice area. Now it has a few very good restaurants and just a nice little quaint area to hang out in. Great farmers market too.

I use to head over to Madison Park and stop in Scoop De Jour for some really good ice cream. Believe it or not its owned by a super cool african american family. Also the wife makes the best egg salad sandwich in town and Maidson Park is a great little quaint area at the end of Madison St on Lake Washington. There is also a great playground for kids in Madison Park. Its just a block from the water.
