For me, my favorite is Bridle Veil Falls (a spur off the Lake Serene trail-which can also be done as a longer day hike) out Hwy 2, the trail head is just before Index. It isn't a very difficult hike, I see kids and elderly on the trail. The combination of trees, meadows and really sweet waterfall is hard to beat. Bridle Veil Falls: Bridal Veil Falls

One of my favorites is Lake 22, especially in the earlier part of the summer, when there's still snow at the side of the mountain (well, usually...).

Marymere Falls trail at Lake Crescent is #1 for me, a close second is the Hurricane Hill trail at Hurricane Ridge. Closer in would be the Trillium Trail at the Redmond Watershed Preserve.

Denny Creek Trail, out past North Bend, is pretty easy and very interesting, but is swamped on the weekends (late spring to early fall, anyway). To have it to yourself, go midweek.

I guess I'd have to say Snow Lake (though Bridal Veil Falls is definitely up there) - just to the lake, although the trail keeps going. Since you are already starting off at a fairly good elevation, the views open up almost right away, and the scenery is right out of Sound of Music. The trail is fairly moderate until you begin the last ~1/2 mile at which point it climbs nicely. Before you really get tired though, you're rewarded with stunning views of a lake that looks like it's straight off a postcard.

To the lake and back is a pretty quick up 'n down, and you can make it longer if you want, but it's one of my favorites for getting in a quick, very scenic hike if my schedule is tight.

It's a bit of a drive, but I love Rachel Lake. Also, Heather Lake, which is the trail head right before Lake 22. Both are a little bit more 'fun' to hike - crossing over boulders, through streams - not just a mulched pathway.
