Define pricey - I get all my seeds (organic and non-GMO) on Amazon.
Food To Live! brand Mung Beans 10lb bag is $40. In my half gallon mason jars there is no point in sprouting more than 1/4 cup of beans, unless I am just going to wait for them to show a small tail and make a pot of mung beans right away.
Ive allowed them to grow for a few days, removed the hulls and cooked them up. Delicious and the 10 lb bag has lasted me for months and Im not even half way through it.
The Sprout House is another good brand, and again, you will be amazed at how far that 1 pound bag of seed blend will get you.

To stockpile the seed will require an investment, but its a good value if you look at what you will get for your investment. Theoretically you can use any seed you wish, so if organic and non-GMO isn't all that important to you, you can check out regular mustard and broccoli, and alfalfa and whatever seeds in Burpee and anywhere else that might offer bulk pricing on seeds you can try to sprout.
