I'm moving from South Florida (yes, another one) and I'm debating between South and North Carolina. I'm a teacher so I'm Interested in good school districts. Can somebody shed some light, please?

I would say try the upstate area, it would give you the best of both worlds. Charlotte is very close to the state line of South Carolina and the homes are less there. try this link for some info http://www.b-brealty.com/

The best school districts in SC are in the Greenville and Fort Mill (right outside Charlotte) areas.

Fort Mill has a wonderful school district! I am a local realtor, and I can tell you that many people would give an arm and a leg to have their children in the Fort Mill school district. The area is beautiful and growing like crazy! Also, my father is the assistant superintendent for York School District #1 if you need job info. Hope this helps!
