Everybody has a different taste for potato salad.

I love potato salad but the potatoes must be soft and the mixture must be--"wet"

I can't stand " crisp" potatos" in potato salad, nor potato salad on the dry side.


My wife is of German descent and says German potato salad always has potatos that are less cooked (but she makes it my way cuz she nearly chocked once on a hard, small piece of potato salad)

Here you go, any questions, just ask.

1 26 oz can of jalapeno peppers. (I buy canned with carrots and onions)
3 14 oz can's of stewed tomatoes.
2 medium sized onions
~ celantro to taste (remember a little bit goes a long long way)
1 tsp of chili powder
1 tsp of Worsteshire sauce
3 TBLS of ketchup
1/2 tsp seasoning salt

Chop everything finely. Do not drain tomatoes. Mix in a bow and pour into jars. Can eat it fresh or you can can it.

It will taste like "More" put some on a chip and you want more. Also, will be mild the next day. But let it set in the fridge for 3 or 4 days and it tends to warm up some.

Let me know when you make some, what you think.

Potato Salad for me is better if simple:

5 lb bag of Yukon Gold or Medium Idaho's, peeled, cubed, boiled until just fork tender but not falling apart.

1 Dozen soft boiled eggs

Helman's Mayonnaise, Kosher Salt, Black Pepper, some Paprika, and maybe a few dashes of "Tennessee Sunshine" Hot Sauce to kick it up a little. Everything should be mixed up warm and sort of mushy.

You could add onion or other things but I like it simple and served warm.

EH, I'll try that after I go get groceries next... Homemade salsa is bliss.

Personally, I like potato salad without hard boiled eggs. Call me weird, but I can't stand any kind of eggs.

My thought is. DO you want potato salad, or egg salad? Pick one, don't combine them.

I prefer the herb potato salads made with olive oil, I don't have a recipe unfortunately. I used to have it at Ruby Tuesday off the salad bar but they changed it awhile back and it's no longer available. Guess I'll have to start looking for a recipe. I like most kinds of potato salad, just no huge chunks of raw onion for me. I have been known to throw in some banana peppers on occasion, do that in my tuna salad and macaroni salad too. Adds a nice little zing.

Ruby Tuesday's Potato Salad Recipe

8-10 Brown Potatoes
2 C Mayo
1 C Ranch Dressing
Few Tbsp Yellow Mustard
1 Tbsp pepper
1 Tbsp Salt
1/4 C Chopped Celery
1/4 C Chopped Green Peppers
1/4 C Chopped Boiled Eggs

Cover Potatoes in butter and salt. Bake at 350 F for approx 1 hr. or until soft. Allow potatoes to cool before cutting them up, you can leave the skin on or skin them completely, its really up to you. Add rest of the ingreadients and stir gently so you don't squash your potatoes too much, you want to keep it chunky.
