Another BEATO (bacon, egg, avocado, tomato and onion salad with a squirt of lemon juice) and strawberries for dessert. Held aside a couple of slices of bacon to enjoy on their own. Tried the super-thick cut stuff, and man that is good! Doesn't shred to pieces in the pan while you're trying to turn it, either. I'm hooked.
Tomorrow night is going to be pot roast with steamed asparagus on the side.
People thought I was crazy when I decided to switch to a grain-free, sugar-free, no processed junk way of eating. Heck, I thought I was crazy. But I feel great, have lost 20 lbs. in 2 months and eat like a queen. Perhaps best of all... I've been forced to finally learn how to cook.
I canned 17 pints of Salsa today. Whatever I have tonight is going to have salsa on it.
