I know what you mean. I almost started baking stuff. That never happens. I am happy with longer days and warmer weather. I think I will be grill shopping here shortly.

Last Night I threw together a (?) chicken casserole. I guess you could call it that.
I baked 6 pieces of chicken /w "meat tenderizer" in a 13x9 pan.
While the chicken was baking,I fix a box of
Au Gratin potatoes in a sauce pan. While that was boiling, I added can of green beans and(1/3 cup) bacon bits.
When the chicken was alittle over 1/2 done(30 mins), I turned it over and poured everything from the sauce pan in with the chicken, spinkled shredded cheddar cheese on top and let it bake for 20mins.
Not bad at all, if I say so myself..

Servings: 4-6 servings

Prep time: 10 minutes

Cook time: 25 to 30 minutes

Total time: 30 to 40 minutes

Ingredients:
2 cups crispy rice cereal
1/2 cup grated Parmesan cheese
1 envelope ranch salad dressing mix
1 egg beaten
8 skinless boneless chicken thighs or breasts (6 oz each)

Directions:

1 Preheat oven to 350 degrees F. Spray a baking sheet with nonstick cooking spray. Combine the rice cereal, Parmesan and ranch salad dressing mix in a large bowl.

2. Place beaten egg in a medium bowl. Dip the chicken into the egg and then into the cereal mixture to coat evenly.

3. Arrange the coated chicken on prepared baking sheet. Bake until golden and juices run clear when chicken is pierced with a knife, 25-30 minutes. Serve hot.
For a different texture and flavor substitute crushed corn flakes for the rice cereal in step 1.
For a buttery flavor drizzle with 1/4 cup melted butter over chicken before baking.

That's the way I cook. If it sounds good, it should be.

BTW, I love hog rotten potatoes.
