I am going to gut out my gas grill with burned out burners and replacement parts being hard to find. I am going to start using it as a charcoal burner.

Looking forward to grilling brats and the like.

Thinking I will roast some chicken this week. I made some a couple weeks ago, it was the best I have had... Almost ever.

small charcoal grill placed in a grassy area between 2 apartment buildings, near where I park my car.. toss the charcoal into the charcoal chimney.. toss it in the small grill.. toss the dry apple-wood right on top.. quickly put the grate on and put on whatever food I'm using... brats, chicken, etc. Hy-vee brats 10 for 7 bucks have been a favorite lately... bacon cheddar, pineapple, wild rice, green onion, etc.

Place a cube of butter, about 2-3 TBSP, on top of the meat (with the exception of high fat beef) .... the butter melts and drips down and creates smoke that is just wonderful combined with the apple flavor.

For what it's worth I do like both the taste of gas and charcoal. I find the overbearing smoke flavor that I love does get tiring after awhile and sometimes it's just nice to have the cleaner flavor of the fat dripping down on the flame (from a well used, not cleaned often gas grill ) .. though I find charcoal much easier to cook with.. because the smoke will keep it from heating up too much and flaring up. Gas requires micromanagement.. charcoal.. put the stuff on and walk away for 5-10 minutes. Either way, I love summer.. and grilled food.. charcoal and gas alike!

I drug out the old grill and lit up charcoal. Had chicken grilled. Then the storm rolled through. The grill kept the temp up through the deluge.

After grilling part of the breast, I sliced some up and finished inside in the skillet and had an enchilada of sorts
