It's either Buffalo or Antelope. Got both thawed out and not sure which to cook.
I've been wanting to ask someone this for a while. Glad you posted this. I've seen buffalo in one grocery store here in Tucson (at $6.99 per pound - no way). I know that the availability of this will increase when we move to SD (or I assume it will). Anyway, how is this prepared/cooked? Like ground beef (the buffalo they advertise here is ground)? Thanks.
I LOVE Buffalo, it tastes alot better than ground beef. We buy ours from Buffalo Ridge near Sioux Falls/Hartford and its $4.50/lb I think. You can't cook it as long as regular hamburger because it will become too dry. I love buffalo Jerky, thats the best
I like ground buffalo too. I've only had it a few times (you can buy it in the grocery stores here in GA too, but it's VERY expensive...definitely only a treat once in awhile). Can't wait to get to SD to get more of it, cheaper!
Just back back from the Golden Corral near my house. Broccoli, carrots, macaroni, peas, lima beans, popcorn shrimp, chicken, baked whitefish, and then DESSERT! Had 3 plates, was gonna have 4 but I told the waitress I was watching my weight.
Top sirloin with butter, garlic, mushrooms, rosemary, kosher salt pepper. Pan seared, then under the broiler for 10 minutes. Made a mushroom sauce with balsamic vinegar.

I actually live in Wyoming. But I was born and raised in So. Dak.
Buffalo, here, is $3.99 a pound (Ground). Ground Chuck is $3.56 a pound. Regular Ground Meat is $3.25 a pound. So going with Buffalo doesn't have to be a special treat.
You cook it just like you do ground meat. It is a lot more lean and as such, doesn't need to cook as long. But I use it for hamburgers on the grill, in a frying pan, use it in Hamburger Helper, cassarols, etc.
Antelope, on the other hand, is really lean. If you fry a burger in your frying pan, you have to add oil.
At 5:30 I put boneless pork ribs in the slow cooker with a little bit of Roasted Rasberry Chapotle sauce on top.
Made Cucumber Salad.
Baked 5 potatoes and when they're cooled off, they will become german potato salad.
About 2 I'll add some carrots, onions, celery, and some brussel sprouts to the ribs.
