Not talking traditional rivalries which have been repeated ad nauseum, but what have been the most intense, interesting or entertaining head-to-head matchups so far this century?

Nadal vs Federer comes to mind first, for obvious reasons. In the NBA, there have been intense rivalries that petered out when players switched teams...Bulls vs Cavs, Celtics vs Cavs, Warriors vs Clippers, Lakers vs Kings. I’m not much of an NFL fan but Steelers/Ravens teams and fans seemed to genuinely dislike each other about 10 years back. The Braves/Mets rivalry at the turn of the century was great...North vs South with players getting involved with trash talk. Mayweather/Pacquiao is another obvious 1vs1 rivalry, due to anticipation of their eventual match if nothing else.

I’m not as familiar with Premier League or other world football rivalries so maybe someone else can help out there?

Lakers/Kings is an interesting one. The problem is the Kings never beat the Lakers in the playoffs, although there's still that controversy surrounding the legitimacy of the 2002 series.

Red Wings/Avalanche was a good one in the NHL. The "peak" of it has passed the 20 year threshold at this point but they did meet in an epic 7 game series for the Western Conference crown in 2002.

That 2002 playoff game was a total sham. I find it hard to believe a couple of NBA refs could be THAT bad in one given night. It was an absolute nightmare. I am convinced the Kings got hosed that night.
