I am looking at a house that seems when looking at the map, is SW of Tallahassee actually in the Forest.

Yes the forest is in the area you describe. Perhaps you should look at places along spring hill road if you would like to be in the forest.

This property is actually just off Spring Hill Rd. Is there wild life to speak of in the forest, Deer, Bear and so on? My real worry is the kind of people this type of area may attract.

yes the forest is vast and huge. you will find much wildlife there. people should not come onto your property and bother you.

Lots of wildlife in that area, as well as plenty of rednecks (for better or for worse, all depends on you).

That's why I moved to rural south Florida. It's easier to spot a bad redneck than a bad northeasterner.

I can appreciate that. There are a lot of people who actually like living in those places with HOA and their ridiculous boards sticking their noses into your business at every turn. Often for no more reason then to feel like they can push people around. I would not live in one of those places if you gave me the place and paid me a salary to live there.
