I second East Lake in Palm Harbor, FL.
Great middle class area, great schools and the people are very friendly. Not sure if this helps you but my partner is from Buffalo, NY as he loves it, not to mention the plethora of cars with NY license plates in the neighborhood, so there has to be some appeal to the people from upstate. Given your dislike of the people there, I don't know if that helps you or hurts my suggestion.
We are an outdoors family as well and there is plenty of things to do in this area. Brooker Creek Nature Preserve has a wonderful nature center with miles of hiking trails. John Chestnut Park is right on Lake Tarpon, with boat ramps, observation tower, playgrounds and a dog park. Pinellas Trail is a HUGE county wide paved trail that is partially extended into this area and construction to the north is currently in progress to connect it to the other 30+ miles of the other half of the Pinellas Trail.
Lots more trees and small hills than the rest of the county and polite people.
Oh and it takes us maybe 30-40 minutes to get to downtown Tampa from here, not during rush hour though, that should be mentioned.
We love living here, so I might be a little biased.
