I found a safari zip line in St. Cloud. Florida EcoSafaris - Soar Over Forever Florida On Our NEW Zipline Safariâ„¢

I think that's actually the only one in Florida. Looks like fun! (For most people.... I'm afraid of heights.)

We went to the Tarpon Springs Art Festival a couple weekends ago. Much nicer than any I'd been to in Tampa or Lakeland.

its quite a long drive, but check out theater in the park in St Petersburg. Rent is on this week and next. You can take your own picnic (and wines!) it's about $10/15 a ticket and well worth it. The downtown area of st pete does a lot of outdoor activities and they are not so paranoid about folks enjoying a glass of wine whilst getting a little culture either.
