Also try to stay a night or two in Fort Desoto Park in St Pete. They have kayaking available in the mangroves and its a real scenic spot. A lot of times, you can camp right on the waters edge.
Paved Bike trails are throughout the park and there are several fishing piers if you are into that sort of thing.

Try some Spanish food at any of the great restaurants on 7th Ave. There is a lot of history in Ybor and I believe they have guided tour. You can ride the trolley around the area.

Tarpon Springs for Greek food and sponge diving. Walk around docks and enjoy the shops and the water.

I'd advise Ft. De Soto Park/Mullet Key, and if the ferry is running, the one from Mullet Key to Egmont Key.
