Yikes,

We just got an offer on our house in south florida, after only 23 days. Originally, we were going to move to N. Georgia. My husband's current employer would allow the move. Now he has been in interviewing stages with another company who would like him to be close to Lakeland.

We just became empty nesters, our son is in Tallahassee. If we take this offer, which actually is a really good one, we have about a month to move. So I am thinking Tampa Bay/St. Pete/Palm Harbor. But I want to rent first.
Any ideas on areas, apartments, houses, for short term rental?

St. Pete or Palm Harbor will be a real haul to Lakeland, I would stick with Tampa area, or Lakeland itself. It depends on what kind of lifestyle you want as to what area is best.

Depending on your lifestyle I recommend Dover FL. It's rural, not as bad as I thought but you can get a nice sized newer home and huge lot and be pretty much be exactly in the middle of Tampa an Lakeland. I gotta admit, I really liked Lakeland. Wow, what a quaint little southern town, great restaurants, coffee shop(s), pubs. Just an amazing downtown. Everything Gypsypsychic writes about Lakeland is "spot on". So if hubby gets the Lakeland job. Checkout South Lakeland or even some areas South of downtown Lakeland. Awesome, awesome little town ! For short term rentals on the Tampa side, there are plenty. We found Westchase Park Village and they do as little as 7 month leases. Like the real estate market, the rental market in the Tampa area is just as desperate so you will have plenty rentals to choose from in all the above areas you mentioned that are also all 40+ yr old friendly.
