Hello, I am looking to take a roadtrip to Texas in January. I have never been anywhere near, but love country music, horses, cowboys, and would love to get tips from people who actually live there. I would rather spend time visiting non-commercialized areas of Texas. I like to see small towns and interesting sights. I know we will be stopping in Austin and San Antonio...are there anywhere near these two places that would be worth stopping by? I am up for anything!
Are there any rodeo's that take place in January.

Any advice would be great!

I'd recommend that you check out the websites of a couple of shows about exactly that for ideas. One is Texas Country Reporter, the other is The Daytripper. The former will show you some interesting places all across Texas, the latter is more the Central/South Central part of Texas.

You might want to go by Luling to have BBQ at City Market, and see Texas oil wells.

Most of the big rodeos in the state are in February and March, but the Fort Worth Stock Show and Rodeo in 2011 runs from January 14 to February 5, if that fits your schedule, and sounds like it would be what you're looking for. While in Fort Worth, you could check out other things like the Kimball Museum, the Amon Carter Museum, and the other museums in the area.

You could also check out Fredericksburg, Kerrville, and Bandera. If you spend a night or two in Bandera, you might get to go on a trail ride in the Hill Country State Natural Area - and while down in that area (or on your way to Fredericksburg from Austin) go by Enchanted Rock.

There's lots more (this is all really in just one tiny part of the state, except for Fort Worth), but that's a start!

Based on your description, here are 2 small towns in central Tx worth visiting:

Near New Braunfels, this place has a dancehall that sounds right up your alley. It's a historic/entertainment district type place overall. Mostly it's places to eat and check out shop:
Gruene Texas

This place is hard to describe, but it is simarily themed, and it sounds like what you are interested in most. It's right on the outskirts of Fredericksburg, which is a great place to visit:
Luckenbach Texas and Dance Hall, Best Dance Hall in Texas

I second Ft Worth if you are into cowboy stuff. I enjoy visiting Ft Worth. I have yet to catch it, but they still do a cattle drive regularly near the Stockyards.

Ditto those recommendations and I would add the Broken Spoke on South Lamar Blvd in Austin, TX.

The Sandhills rodeo in Odessa is good.
Also the first rodeo ever was in Pecos so look for a rodeo in Pecos.
