Out here in West Texas, Midland College would probably be your best bet. I think it's a little larger than most community colleges out here in West Texas. Here in Abilene we have Cisco College-Abilene Campus that you might also check out. The climate here in Abilene and in Midland is also hot and less humid compared to eastern parts of the state and the cost of living is low in both cities as well. for lower humidity, san antonio isnt too bad. does get hot, but not steambath, stifling.
plenty colleges around the town, guess that determines your living location.

personally id check out the college on the 410 loop on the south side of town, drive from somerset or lytle area. sorry, dont know what outfit the campus is, but is fairly good sized and brand new.

san antonio actually has a little bit of contour, no mountains of course.
some green here, trees and the dye they dump on the river downtown.

dont let anyone tell you ANYPLACE in east texas is not humid as hell.

I hate Stephenville with all of my heart and soul, but Tarleton is a damn good school. I absolutely hated the students but it was the best learning experience I had out of the 3 universities I attended. It is also fairly cheap for a University.

I live in Big Spring, but that doesn't meet your criteria 100%. We don't have whole foods market. However, I would say yes to Midland. Can't really go wrong there.
