BOIL?---BOIL?---Boil ribs--who said that--who can't do bbq so that the meat falls of the bone w/o any BOILING ---- that sounds like S.Carolina bbq to me

Bob's bbq in San Antonio if its still round...I know they have had some trouble in the past but very very tasty stuff! Dukes in Georgetown is pretty good, right off 35 northbound

Default Texas BBQ lover says......

I've been to many a place in Houston, Dallas, Midland/Odessa and the Valley and I must say the best BBQ is Willie's in Alamo, Texas located about 7 miles east of McAllen.

Smitty's in Lockhart is high on my list, along with Opie's in Spicewood. The Neiman Marcus brownie thingies at Opie's aren't bad either.

I know this is very unTexan, but the BEST I've ever had was at Arthur's in Pine Bluff, AR. The place has been around since at least the 1940's and they know how to do pig.

i havent tried any hill country bbq, and right now i live in South Texas where it aint Texan in any way....no bbq stuff, just mexican taquerio places, so i have to base my answer on my North Texas past..................
i love Railhead BBQ in Ft Worth and Angelo's in White Settlement/Ft Worth

Not from SC. I'm from MO and sometimes that's how you get 'er dun. LOL
I get no complaints...only complements...even from "native texans".

I'm sure there are other ways to achieve super tender ribs but boiling is absolutely the easiest that I've found. There are no secrets or tricks and the risk of screwing up is very low.....just throw them in some boiling water and walk away. The only way to mess up after that is grilling them with too much heat. And then it comes down to just knowing your grill.

I have been to just about every BBQ joint that has been mentioned on this thread and am surprised that no one has mentioned Mt. Zion Church in Huntsville. They are only open about 4 days a week but are hands down the best that I have ever had. They have had several writeups in Texas Monthly and other magazines. If you have not been there I strongly recommend giving it a try.

Default COUNTY LINE - Dallas, Austin, Houston BEEF RIBS

YUMMMY - Get the family style all you can stand 3 meats. Original to Austin, and now in Dallas area near Rockwall on the lake next to Bass Pro Shoppe (Dallas side - Rowlett). The ribs are the best in the world.
