Does HEB buy from them? And what consists of beef carcasses? Is that the left over bones or is that the whole cow?

I believe "carcass" includes the whole, or half, slaughtered steer, heifer or cow, i.e., what you see hanging on the hook just before it goes into the refrigerated truck.

Exactly why my family keeps one calf per year for consumption instead of selling it. We know what we are eating, and what it ate also. Feeds us for the year.

I asked the butcher at the HEB on Gattis School Rd and he tells me HEB never bought from that supplier. I found it a bit disconcerting there is not list of who purchased and sold the meat and meat products. Whats up with that?

HEB does not buy from this company at all.

All meat animal carcasses are composed of muscle, fat, bone and connective tissue.

HEB beef is processed in Texas only.
