This is an older thread, so I know the op already came to Dallas and left. But for anybody that happens upon this thread looking for good bbq, it's worth the drive to Ennis to go to Bubba's imo.

OP has not left, I actually live here now. I haven't tried a lot of joints but I do like to go to twisted root every once in a while. Not exactly BBQ but still good.

I got a tip that Spring Creek in Plano is suppose to be good also.

The bread and sides are better at Spring Creek than most of the big name places. They do meat well, and nothing else.
