I think there's a Military School in San Marcos, which would have pretty much everything else you are looking for.

I thought you were looking to be near a military town sorry the only military school I know of is the Marine Military Academy in Harlingen.

You might like the Bryan/College Station area. it's a very conservative area, home of Texas A&M, which is sometimes referred to as one of the most conservative universities in the country. I don't know about the private schools there, but there are lots of still rural areas to live, and although it is very definitely a college town, it also is very family friendly.
