As others have mentioned, Alpine/Fort Davis/Marfa. Specifically Alpine or Fort Davis as Marfa is a little bit too hipster for me. The average high in Alpine barely reaches the 90s and the summer nights are cool. In the winter the average low is about freezing. Not too extreme on either side, although coming from south Texas, it will be a little cold for me at first. San Antonio is just hotter in general.

It's a good thing the economy and jobs are not relevant to the question, because there aren't many down there! If you can get a job at the university in Alpine I guess you're set but otherwise you are going to have to work for some store in one of these towns. If you don't mind a long drive, you could MAYBE live in Alpine and find work in Fort Stockton, though the town isn't much bigger than Alpine is. Best option is to have a remote job, start a business (not sure what would thrive there), or work for the university.
