If I lived in the US, it wouldn't be worth visiting either place if all I have is 2 or 3 days. It's not a cheap trip and it's more than 2 days travel time. I would probably wait till I had more time and see both places.
Israel is a much smaller country than Egypt. So it would be more practical and easier to see more of Israel than Egypt if you only can make a short visit of a few days.

Egypt. The pyramids, sphinx, the temples ... are just so awesome. If you're in Cairo you will see the most crowded, hectic, colorful Muslim city in the world. It's full of tenements, homeless people, street peddlars, mosques and Islamic architecture. Israel, on the other hand is much more modern and clean and looks more like Canada or the US - air conditioned shopping malls, freeways, highrise condos, tree lined boulevards, McDonald's, IKEA, etc.
Egypt is in the middle of a revolution right now. Unless rubber bullets, tear gas, and water cannons are your idea of a good time, you might want to avoid Egypt for the time being. Of course, on the other hand, this might be the last chance to see it before it becomes an Islamic state like Iran.
