Portland, OR -- super nice airport, easy to get around
Long Beach, CA -- it's small, so no long lines for security/bag drop, and concessions are OUTSIDE and you can even go outside while you wait for your flight. I've never seen that anywhere at any other airport...or was that due to construction?
Burbank, CA and Ontario, CA are nice too. Basically anything but LAX over here.
Detroit, MI -- I had never used this much when I lived here but it's actually really really nice. I was pleasantly surprised.

For me: Denver - it's my home airport and is relatively new with a symmetrical, logical, straightforward layout. Also Minneapolis, even though it's a lot of walking to do, it's got a freaking huge mall in the place.
DIA too but damn conveyors shred my bags. Love the conspiracy paintings too.
Key West. They have an outdoor bar area at the gates done up like a beach.
Key West airport is a trip! The people that work there are true laid back Conch's, you can have a drink while you wait for your luggage before you rent your car--all within 15 or so feet of each other.
Las Vegas' airport is huge and really interesting to walk around
Winner! Plus you can drink and gamble right in the airport! 2 out of 3 vices, can't beat that for entertainment!
