A whole bunch of frozen halibut. But that's probably not that weird on flights out of Anchorage.
I once brought 20 lbs of premium brown rice ing my carry on bag. Some security guys stopped me and asked about it, but mainly because they were asian and wanted to know where I got it from… so that they could get some for themselves.
Once as a joke while packing my luggage, I put a single sock in without it's match along with everything else. I imagine the baggage inspectors were freaking out about that wondering if they were going to get in trouble for losing the other sock and tearing apart the baggage area looking for the other one. Didn't even get an apology from them afterwards.

That was satire, right? Impossible to tell virtually.
I remember when I was teenager visiting my grandparents in the USA as my family was living overseas and my mother asked me to buy her American style mop that I had to pack in my suitcase and that was weird to me at the time.
I also always have lots of food/seasonings/spices from overseas.
Once I had pounds of smoked sausage, and my luggage smelled like a smokehouse. The (US) custom guy said that my luggage smells yummy. We had a small talk about food overseas, but usually no one wonder or care.
The weirdest thing that I checked in baggage would be a suitcase with nothing but bags of UTZ Kettle Classic Spicy Smokin' Sweet Chips. My wife and I live in Maryland and her sister and her sister's husband live in Atlanta. He absolutely loves the chips, but apparently they don't sell that specific brand in Atlanta. So on one of our latests trips, I bought all the UTZ Smokin' Sweet in my neighborhood grocery store and put them into a suitcase. Worked out perfectly, we always fly Southwest and we get two checked bags for free, I only needed one suitcase for my clothes and stuff and filled the other with the chips. Surprisingly all of the bags of chips made it to Atlanta in perfect shape (I was sure that at least a couple of the bags would be popped given the way suitcases are tossed around).
