We have no idea what you will be buying. So there's no way to tell you what's an appropriate amount to take. I would say take as much of what you have saved as you are willing to part with. And talk to your parents about the best ways to travel with that much money. You probably don't want to carry all cash, and definitely don't carry it all together.
I hope we don't have to dictate the obvious - you don't want to take $600 in cash with you.
I am assuming you are just estimating your budget and putting the saving in the bank. To withdraw with ATM cards or for credit card expenses. DO NOT, do not carry $600 in cash unless you can afford to lose it.

Plan to pay cash for any purchase of under $20 in cash. Item over $20 should to on your credit card.
Why not pay for everything in credit excepting some things like tips, cab fare or if you go to a ma and pa store? …that's assuming your card is accepted and no one's charging you for using it. That said, if the card is not pre-paid and you aren't confident about sticking to the $700 budget with it then don't get a card at all just use cash and a money belt.

It is so hard to find decent accommodation. We found the Reunion resort but on reflection it looks to be out in the middle of nowhere. We want somewhere near the parks and airport. (we will be arriving at about 9pm)
Anything that is good is about £6,000 per month and that is just too much for us. Sometimes we will find a good villa but then go on street view and it will be out in the middle of nowhere. In Palm beach gardens it was soooo much easier to find nicer villas near areas with lots of amenities.
