I see many people preferred that option. But I have not noticed a difference in comfort of the beds, or quiet of the rooms, in nice places vs. cheap ones. Clean grout and fresh paint don't matter much to me.
Are there other amenities that I don't realise are available? What makes an expensive hotel worthwhile?

I hate to tell you that there is a HUGE difference in the comfort of the beds between a budget motel and a luxury hotel. I've never had the cops raid the room next to me at a four or five star hotel, it happened at a Motel 6 though.
Amenities in a luxury hotel go on and on. Everything from dual line phones and a separate shower and soaking tub to a pillow menu and Champagne on arrival.
You'll never need to ask for a blanket on a US carrier in first class on an International flight. They will be already at your seat with a comfy pillow when you board--and not those tatty things you get in economy. Some US carriers have really stepped up their game when it comes to International first/business service. I'll take US Airways over Air France any day. Talk about surly and rude--Air France was one of the single worst flying experiences of my life. Pitiful.
I fly first when flying cross country, but book coach for east coast trips--my status gets me into first 99% of the time. I choose at minimum premium economy for international flights.
Yeah I get that but what you don't get is I was receiving that level of service in the coach class on Asian and other international carriers. I was referring to their attitude in general regardless of where you sit. In general, the flight attendants on American carriers feel entitled and act like they are some pseudo ship captain. On Asian carriers, the flight attendants are there to serve and act like it. The fact that it takes a first class ticket to receive basic service on an American carrier shows how pathetic their level of service is. I flew U.S. Airways to Rome and it was awful. Not only did the flight lack amenities compared to other carriers, their service was lousy too. You couldn't pay me to fly U.S. Airways domestic let alone international. I'll take a multitude of International carriers over American ones. But I agree that not all international carriers are great. I thought Lufthansa was also surly and rude. Trust me, fly Cathay Pacific, Emirates or Korean Air and you won't fly anything else. It's a world of difference in terms of service and luxury. Virgin Atlantic also offers amazing service.
I voted for the luxury flight. But I wouldn't stay in a hostel (at my age). But I do like smaller, simple hotels, 3-star or less. They generally have some charm, and allow you to enjoy the local culture. But travelling Business Class? Unbelievable. When I can afford it, that is.
