Cape Town is the only one I've never been to on the list and I don't think I'll be visiting it anytime soon. I just don't have much interest in that area.
Depends on what you're looking for, Sydney can be extremely boring. I've been to quite a few cities in Australia when I lived there over 10 year ago, and have no desire to return. Australia, in a lot of ways, suffer the same dilemma like US. Other than natural beauty, they don't have much else to offer, food is awful and not much culture to speak of. At least US has great music scene and certain cities in the US offer authentic american cuisine.
There are a couple more that should definitely be on that list, especially Paris which could be the one I would vote for. In addition there is London, Berlin, Moscow, Munich, etc. the choices are endless but I think there are many that are much better choices in the ones you listed.
The intention of the thread was not only to see which city people desired the most, but to cover the spectrum of the world ant not just one or two continents.

Been a few times to New York, if you've never been then one week there is great. So much to do.
Been once to Rome and honestly you can see it all (or walk it all in my case) in 3 days. Nice city though and you can definitely have fun for a week there.
Haven't been to the other choices.
Definitely would do Sydney though because I can also go to Melbourne. Would be cool to go during the Australian Open.

I have never understood the appeal of Las Vegas. Amsterdam yes, for 1 week, I would go during the annual North Sea Jazz Festival and split the time between Amsterdam and Rotterdam. Bangkok, yes, 1 week checking out their open markets. Ibiza, never been but will put that on my list.
Las Vegas? What else is there other than cheesy shows and gambling? I'd much rather go to Grand Canyon for true desert vacation.
Having been to all of those places besides Capetown, I'd be inclined to pick it, but only if I can leave South Africa and travel in other parts of Africa.
I'd pick Rio. Not a huge time difference from CA, so jet lag wouldn't be nearly as bad as flying to Europe and flights aren't that long. Besides, there's so much to see in and around Rome that a week wouldn't cover much. Sydney is way too far away to fly to Australia for just a week. Same deal with Japan.

Flying from San Francisco to Rio de Janeiro (13 hours, 20 mins) takes more time than flying from SF to Tokyo (10 hours, 30 mins) or Rome (12 hours, 40 mins)
