I'm going to be doing a trip to Europe (Spain and France maybe Italy) in May. Not booking anything quite yet because I don't know exactly when the days will be, so I was searching on Orbitz for flights around the time we'd be going and I saw Air Europa advertised for $420 non stop when the next highest total is like $1,700 which threw up red flags for me. Anyone familiar with this airline?? Is it like Spirit where the base fare is so low because they nickel and dime you for everything else once you get to the airport, or is it a legit airline?? Anyone with any comments or observations that has flown with this airline before would be greatly appreciated!
I know people who have flown this airline and they said it was nothing special. If I could really get a nonstop return from NA to Europe for $420 I would jump on it. I don't think that fare is right.
There's something wrong with Orbitz and Air Europa. Whenever I actually click on a flight (e.g. JFK-BCN on 5/10, return on 5/26), the displayed fare of ~$900 jumps up to ~$1,150. I tried 3 times for 3 different dates. You should probably use ITA Matrix or Kayak.
That said, where are you flying from/to? Unless you're shooting for a remote destination airport, $1,700 sounds high if you are able to leave from the NYC area (as your location suggests). I see $1,082 nonstops (Iberia, United) for Madrid until May 15, then it's $1,222-1,347 depending on the day. Aer Lingus through Dublin is cheaper on most days.

I get this message: "The fare for that itinerary is no longer available".
They do but they're often mistakes, and almost always gone within a few hours -- pricing glitches or attempts to fill flights that look like they'll be undersold. In any case, they're most likely gone if you sleep on those offers. Hundreds of people at Flyertalk search for flights 24/7 apparently.

There are times when an airline will offer great rates on purpose. Emirates recently offered $400 R/T fares to Milan from JFK. The only limitations were that you needed to purchase 2 tickets and travel had to start by May 10 and be completed by May 30th. This deal was available for about a week the dates that I booked were available the whole time the offer was opened. While there are times you need to move quickly to take advantage of a mistake, it is possible to find good deals if you keep up to date with sites that share travel deals
