I've got two weeks in October and I'm not sure what to do with the time. Anyone out there going on an adventure for two weeks in October who might enjoy a travel companion ... good food, photography, wine, bikes, sun, fresh air, and quiet sleeps? ... guaranteed interesting
Why not? It is not like Paris or Florence is overrun by refugees. There is no need for paranoia.
True, but Northern Europe is cold, rainy, and windy in October. Greece has financial problems. Italy and Spain are probably OK weather-wise in the far South , most likely in the areas where refugees are landing or drowning.
Sounds like you're describing the Napa Valley region of California to me! Or possibly the Finger Lakes region of New York State, provided you go in EARLY October.
It's not known for its wines, but the desert southwest is also beautiful in October, and spectacular for photography.
And if you don't have any luck finding a travel companion, don't be afraid to go solo! Solo travel can be incredibly enjoyable, as you get total freedom to choose what to do and when to do it.

Weather wise, most Europe is completely fine in early/mid October. I would say better suited for travel than July/August by far. Paris for example was consistently above 20C in the first half of Oct last year, which is very comfortable for travelling. And Paris is pretty northern and there are many places warmer than that.
In Oct you don't really go to the "far south" of Spain and Italy. Plenty of places in Europe has great weather. Heck I went to Lisbon and Barcelona mid Feb and found the weather nice and warm.
When people talk about good weather, do you really mean 28C+ days with burning suns? That's really not what I call the optimal weather for traveling, especially if that involves plenty of walking. You get tired very easily. I did that in late June once and swear I will avoid west Europe during June-August in the future.
My family and I are going to Greece and Rome in mid-October and I think the weather is pretty much ideal for travel. It's not sunbathing weather by any means, but highs of 65 to 75 degrees Fahrenheit are perfect for sightseeing in my view.
