In terms of sheer beauty, I don't think it compares to Bryce or Zion. Zion is just 2.5 hours from Las Vegas, and Bryce is just 1.5 hours from Zion, so they are all easily doable in a single trip. Also, in the event that you're animal lovers, you could visit Best Friends Animal Sanctuary, just across the Utah-Arizona border. It's the largest no-kill animal sanctuary anywhere in the U.S. and is in a drop dead gorgeous setting.
I 2nd this suggestion. It is a pretty nice trip if you fly into Las Vegas, then drive to the Canyon, Zion and Bryce. Bryce and Zion are outstanding, although I do love the Canyon.

The South Rim's not so bad if you're wiling to use your legs. Most tourists don't wander very far from the main lookout sites, which makes them easy enough to avoid. And May isn't high season.

As far as the North Rim goes, will it be open when the OP wants to go? Unlike the South Rim, the North Rim gets enough snow that it closes for the winter months.

Well, Montgomery is a suggestion because its a beautiful place embraced with lots of natural sites and good for adventurous sports like kayaking. Some fresh authentic sea food restaurants are available, great place of historical sites like Museum of Alabama, Fort Toulouse - Jackson Park, Dexter Avenue King Memorial Baptist Church. Also, you easily find a nice budget friendly accommodation.
