I just wrapped up my first solo trip and am looking to do another! Italy wasn't crazy expensive but it was pricey. I am looking for ideas on places to go for next year. It will likely be around the same time of year. I am open to all regions as long as it is budget friendly. I don't want to do touristy stuff just roam around and get an authentic feel of the destination. I like art, history, festivals, food, and wine just to name a few. I just want to go someplace new!!!! I've already been to Mexico, Italy, and the Bahamas. Please any suggestions and recommendations are greatly appreciated, thanks in advance!!!

For Europe I thought Portugal and Greece are pretty budget friendly relatively speaking. Both are full of history, food, and festivals and Portugal has excellent wines and ports.

I would recommend Iceland. Aside from food it is relatively inexpensive trip especially if you can save on airfare by being able to take one of the lower cost airlines like Wow or Icelandair.
I would also suggest looking for sale and glitch fares. If you are located near or can get to a major city like New York, DC, or Atlanta, you will have a wide variety of destinations to choose from. If you are willing to gamble a bit, I would suggest looking for online groups or sites that will let you know about glitch fares. Also when it comes to European travel keep in mind that you should just look for the cheapest way to get to Europe and then see what it may cost to get the places you are interested in actually seeing, generally travel within Europe is very cheap.
Another one for Portugal. I visited back in November and didn't have a bad day, or a bad meal. It was budget friendly, safe, and very easy to get around.

I second Greece as VERY affordable and special place.
Nearby Baltic area too, Croatia is much like Italy but less expensive. The Italian Alps we found very inexpensive for groceries.
Portugal was OK, but tough to get cheap lodging (<$20 / day) Northern and eastern Portugal were our preference.
Rural NW Spain and SW France is also very nice (and friendly)
Holland by far was our favorite Western Euro destination, we stayed over a month and will be back to see all we missed! You can tour / travel by barge & bike. Plenty of $0 - $20/ night private guest homes Hospitality exchange - Wikitravel Every host was superb, loaning bikes / giving us local favorite food, giving tour info...helping with Holland (ONLY) CC for rural trains, superb (And the tulips were great too!) Denmark was very interesting (#1 HAPPIEST country) locals were very welcoming. Ironically we just met a family who were living in Singapore (2nd happiest country). This family was SO happy and joyful on the MRT, that we had to ask if they were from Denmark! So it was I hope they come visit us !!

BTW, we travel over 50% of the time, usually cheaper than staying home! (Property taxes...)
$10/ day for food, $20 / day lodging, transportation as available. Gotta love those 12Euro flights in Europe!
Italy is not expensive. Only certainly Italian cities, mostly in the north, are expensive. We spent a week in Sicily and a very nice two bedroom apartment cost $45 a night. Food is inexpensive if you know where to go. South of Rome it becomes increasingly cheaper.
And don't say "I have already been to Italy" as if there is nothing else to see just because you saw Rome, Venice and Florence. Italy is far more than just that.
Spain is budget friendly too, so is the entire east Europe. But since they didn't say it has to be Europe, there are plenty of destinations in South America that don't break your bank.
