You need to find a different field of study or else jump in with both feet... There's almost 40 sets of public toilets at JFK alone to sniff out. That will take a while because you will have to go through security to access some of them. You might need to apply for a grant....try Pew Charitable Trust?

I've been to some bathrooms that have that sickly sweet bubble gum smell to cover up the other odors. Yeah you don't get the typical toilet odors but the cover up odors are just as bad.
I've been to some middle eastern airports that have the squat toilets as well as the western sit down ones - Dubai! Oh my God I guess they don't flush or something. I walked into the stall of a squat toilet and almost passed out.
Lots of cleaning, and negative air pressure in the bathrooms, That exchanges the air probably once every few minutes.
While the question never came across my mind, I do agree with the OP in that I don't recall ever coming across a smelly airport bathroom. But I think your post explains why!
There always seems to be a cleaning person on duty in each bathroom facility at most times, at least the busiest times.
