Australia (as it is summer there), Ecuador & the Galapagos Islands (good any time of year) or Israel (which has a very mild winter and Eilat in the south on the Red Sea is normally be warm enough for beach activities). It really depends on your interests besides the temperature!
The Algarve and the south of Spain will most likely be around 55F to 60F in December. It's not beach weather but that's not 'cold'. Same thing for Greece & Turkey. Pack a sweater or Polartec.
Remember what happens in Thailand during December!
I had 3 factories get flooded and needed to hire divers to go rescue my 2-6 ton $300,000+(each) tools. Then it took a couple yrs to find and develop new manufacturing spots on higher ground (or at least out of the Delta!). Meanwhile Dec returns annually and Thailand has got hit several times... (head north, stay on high ground).

I never even saw footage of that until a few weeks ago...then I became obsessed with watching that and Japan. It could happen at any time though...right?
If you collect FF miles don't discount SE Asia, several airlines are selling tickets Jan/Feb for $450-580, a good chance to collect a lot for cheap. Once you get to SEA things are cheap on the ground! And you know you've really traveled to a foreign place.
Singapore is expensive but only worth a weekend anyway, use your Chase points for a fancy hotel & then get a cheap RT flight to Bangkok/Penang/Bali/Vietnam or fly to them, or KL, direct from USA. If "shytown" is ORD perhaps use the points for a ticket to the coasts for the cheap fare overseas, lots of warm beaches in Thailand.
Hot in Europe then, dunno... Malta, Cyprus... Morocco?

Only thing stopping me from going to SE Asia is flying economy class there. Don't know if I can do it. Perhaps if I had an overnight layover somewhere half way in between en route.

If you fly economy there get a sleeping pill from your doctor. Take it after dinner and wake up 8 hours later. Makes it much more tolerable. Also ask about compression hose or DVT prevention.
