Not an easy task, depending on the time of year AND day of the week of your visit. My suggestion is to go to hotels.com, put in your requirements and search In their 'city centre' category.

The trip advisor forums are a better place to get these answers (and those hotel questions you've posted for other cities).

Agree with TA suggestion, also consider staying at a private BnB, I'm sure the Irish Tourist Board has a link for those. I've never been disappointed with the hospitality or the quality of these, the ITB inspects & has a rating system for them. Not only "home away from home" type of lodging but a massive full Irish breakfast is included in the price & will keep you full most of the day.
