I had some type of soup at one of the stands right outside that old palace in Hue thing that was so good and have never seen it since. It's kind of funny because other places in Vietnam (and sometimes restaurants in other countries) have "Hue noodle soup" listed so I get excited enough to dribble urine but when order it's never what I had. IMO Vietnam and Thailand have the best soups in the world, nobody else is even close. I'm in the Baltics now and I see so many folks eating that cold bright purple abomination of a soup, I'm almost retching thinking about it.
I regret so much not taking a picture of the Vietnamese name for that soup written on the wall menu. It shall remain my white whale and next time I'm in Vietnam I shall return to that exact same spot in hopes auntie is still there with that soup.
There are so many types of soups unique to the Central area of VN, it will be impossible to know what you had unless you have a picture or name

Nice photos. We were there in March and the food, street food to fine dining and everything in between, was absolutely delicious. Loved our Vietnam trip.

With all of the time that I spent in Southern Louisiana and all of the alligators that I have seen cooked, that was definitely a first.. If I see tat in person, I am the first in line.
