Costa Rica should be under under control for covid by then. Lots of outdoor actvities and good weather. but Europe sounds really good.

Been to Costa Rica, not too much of a fan... way too expensive, way too overhyped and the food isn't much to my liking - bland and insipid.. in my opinion the whole country is one big tourist trap. I would rather go to Guatemala again, a country I consider incredibly underrated and one of the best experiences I've had in Central America.

AA fares from DFW are still pricey, which is a shame considering DFW is AA's home. I'm seeing fares to Kauai north of $1000 which is too high. AA has just jacked up all their fares actually.

There are some low fares however, I found a good fare to Portugal, that sounds like a good destination as well. Problem is Europe still being in flux.

I'd agree that Costa Rica has some of the worst food in Latin America.

Options:

Morocco or
Switzerland (perhaps start in Zurich, make my way towards Lausanne).. not sure how great Switzerland is during the winter, i'm thinking views of the Matterhorn would be clearer but the hiking trails would be closed.

If there is a low fare there including Madeira I strongly recommend that!

Switzerland is quite nice at Christmas time, but short and cold days keeps you close to accomidation and rail. / trains. Very very nice in late spring (flowers, trees, and many shades of green)

Portugal would be a winter option if you can steer clear of the Euro snowbirds. (which is very easy to do)

Enjoys one of the best climates in the world, very mild throughout the entire year. Not yet overrun with tourists, although it is extremely popular with the brits.
