None. I have very little of value anyway, but I leave my engagement ring at home and wear just the simple plain wedding band. I don't want to give anyone a reason to mug me, and we usually are in the ocean quite a bit and don't want to lose it.
I'm usually wearing a necklace and I take a second one for other outfits. I take only a few clothes, all of which can be mixed and matched, so the two necklaces are all I need. I don't travel with expensive clothes or expensive jewelery. Too much can go wrong.....
Usually I travel with only one small suitcase--I've learned my lesson about hauling too much stuff around, just no. Since I have such limited luggage space, any souvenirs I might buy have to be small. Jewelry is my favorite souvenir. Take two necklaces, go home with three.

Also, because you can attract the wrong type of attention while travelling with jewelry, and you have to watch out for SOME of the hotel staff, if they see you wearing something they like................
I usually just have one pair of earings, one necklace and my wedding rings.
I've very lazy when it comes to my jewelry so I don't change it often.
