In January I'm going to Vegas with my fiance. We gonna stay for 3 nights and wanna have a really good experience. I'm wondering about a few things and would be glad to hear any suggestions.
Let's start:
1) Where do we find a really good buffet, preferable with good selection of different ethnic foods?
2) Is there a good sushi all-you-can-eat restaurant (not necessarily buffet but doesn't matter)?
3) Do you know of any low key live music bar/restaurant? We are pretty open when it comes to music styles.
4) Which resort has the best bars and nicest nightlife atmosphare? We are not into clubbing though.
5) Which shows are really recommendable currently?

Generally, the best buffets in Las Vegas are some of the more expensive which means that you will spend $30+. Many would say that the best buffets are at the Bellagio, Planet Hollywood, and the Wynn,
Since all cater to many international guests, each offer selections of a wide number of cuisines.

There are two chains and I am not sure that I would strongly recommend either one of them. Todai is located in the Planet Hollywood. Mokino is located at the corner of Decatur and Flamingo Ave., approximately 1.5 miles west of the Strip.

Just about every casino property has a lounge act that is free for the cost of a drink.
Bootleggers in the 7000S block of Las Vegas Blvd. offer traditional "old school" Las Vegas entertainment on weekends and pretty good Italian food.

The Rio has a really good buffet, and a separate seafood buffet.

Go out to Chinatown and try out the cuisine. There is a pretty good Sushi restaurant at Charleston and Decautar.

Almost all the Casinos have live music. The ones off the strip have pretty good free acts.
4) Which resort has the best bars and nicest nightlife atmosphare? We are not into clubbing though.
Mandalay Bay is pretty good in my opinion.
5) Which shows are really recommendable currently?
Any Cirque show is pretty good.
I know you said you're not into clubs, but you should really check out XS at the Encore. It's by far the nicest looking club we've ever seen. It has more of a lounge atmposphere, than a club, which we loved since we are also not into clubs. Tons of couples too, which was nice. This has to be the best one in Vegas now.
