I hadn't watched an Emeril show in a while and happened to be passing through HSN where he was hawking his cookware, knives and other stuff. He looked like a float in the Macy's Thanksgiving Day Parade. I know the saying goes that you should never trust a skinny cook/chef but when you see people like Emeril, Paula, Mario and others who are ballooning up before your very eyes, what message does that send about what their cooking will do to you?
I don't think Paula is fat. Chubby, but not fat. And frankly, if you (generic you) can't tell from the ingredients what the recipe will do in terms of weight, well, there's a problem.

I actually think Paula has lost weight since she first started. She just has that glow about her that she is just fun to be around, takes care of herself, clean and presentable, etc.
Yep, one look at the ingredients and one can determine if it is on the Weight Watchers plan or not. Anything that calls for a "stick a butter" isn't always going to be the most "healthy" thing to eat. Good but not always "good for you".
Redrover I think perhaps Emeril likes his cooking too well. Moderation is the key for any of us whether we are chefs or just cook for our families. I do worry because he seems to have gained a lot of weight quickly though.
Emeril is going the way of Paul Prudhomme (giving away my age) if he's not careful. Paul used so much butter and cream, he just got huge. I bought his cookbook and I made the chicken fried salad and the shrimp etouffe and the biscuit muffins. I was single at the time and made both in one week, invited my friends over, the food was delicious but that was the first and only time they asked that I not make anymore of his recipes because both of them gained weight in that one week. Lots of oil and butter. By the time Paul lost weight he had become wheelchair bound. Emeril should slow it down. I enjoy watching cooking like that, but I know better than to eat it regularly.
