Ok Old San Juan is a must see. But the entire island is fun to explore. Six days is unfortunately not enough to take it all in, explore it all, and relax at the same time. So I would relax and enjoy San Juan and the surrounding areas for couple days. Then pick one or 2 exploration days where you will prepare and plan to take the entire day trips visiting various points of interest that are perhaps hours away. Then I would make certain that the last couple days be one of relaxation, enjoying the food, the people and recreation, but that won't take entire days to get to and out of. On those long exploration trips, make sure you drive carefully and honk your horn when turning extra winding curves. There is a cool place called "El Rancho" in corozal. And when taking those long trips plan to stop along any of the little eateries you will see along the roads, some of them have great food for awesome prices. The main highway goes all the way around the entire island in a circle so it isn't that hard to get around there and back.

Thanks for all the info. I've heard food and drinks at the Caribe Hilton are outrageous. Are there any good restaurants walkable from the Hilton that you could recommend?

I stayed in the Caribe Hilton way back when, however, I have since been in that vicinity and would not consider that area walkable at all. You would have to venture into Old San Juan or Condado for restaurants and safer walkable areas.
