The question I am asking is this. What is your favorite vegetarian or vegan meal that is naturally vegetarian or vegan? Meaning dishes that originally don't call for meat or (if vegan) animal products of any kind. The reason I am asking it this way is because I know that you can add faux beef to chili or eat meatless hamburgers but I'm interested in knowing what you like that doesn't need faux anything.

Ok...this is a fav and I have maybe 5 days a week at least. Will follow thread for interesting and creative healthy veggie meals...looks like a super thread !

a) Place in bowl handful of spinach & lettuce.
b) Cut up pepers vegtables ect ect....cucumber..all you got.
3) Add to bowl and sprinkle lightly with a bit of vinegar, light salad dressing, & a hot red sauce.
4) Top off with some grounded flax seed.
5) warm in micro for a minute or so to take the chill out of tomatoes ect.
6) Above wash's down nicely with 1% choc milk.
7) I make enough to do three nights or so and only apply dressings when ready to eat.

there are too many to list - i really like indian food and they have a long tradition of vegetarian food. east asian stirfries and noodle dishes are also high on the list.

my mom has also made chili without meat since i was a little kid (and i was not raised vegetarian). you just make it with beans, no meat or meat substitute of any kind. ratatouille is another childhood favorite of mine. even though we weren't vegetarian we usually ate a meatless dinner a few times a week.

beans & greens is a good traditional italian one. a lot of italian food is very vegan & vegetarian friendly, actually - to make a lot of pasta dishes vegan, you just don't put romano or parmesan on top. a lot of italian soups are veg/an too - white bean soup, minestrone, pasta e fagioli, etc.

I really like Indian food, too. That's pretty easy to pick any dish from.

during the summertime, I make some sort of pasta dish with tomato sauce or sometimes just an olive oil w/seasonings dressing, put the warm pasta over a bed of mixed greens or spinach. Roast some veg. garlic bread....makes a nice, easy to make and cool dinner. (Cooking it doesn't make the kitchen too hot, either).

groar, I agree! Italian food is super-friendly to veganize. A lot of it is already veg/an, as you said. I love Italian food ~

yeah, a summer standby for me is pasta pomodoro - i just dice a tomato (preferably one from my garden!), saute some garlic in olive oil, add the tomato just for a couple of minutes to get it a little warm and soft, add a ton of basil, salt & pepper, serve over whatever pasta. it's ridiculously delicious and involves very little cooking. pasta pomodoro is also a pretty safe bet when eating out at an italian restaurant. at the very least they can generally make it for you if you request it.

Ratatouille served with basmati or jasmine rice. Nice flavors of basil and summer vegetables right from the garden

My favorite meal (not using faux anything) is one my daughter made for the Super Bowl a couple of years ago: Cajun Red Bean Burgers with Ragin' Remoulade sauce, onion rings and three-bean salad. Yum!

Oh, I forgot all about fresh gazpacho (until I read qw's ratatouille post!). I haven't had that in a few years. It's another favorite, easy to make and keeps well in the refrigerator for a few days.

My kids LOVE this meal - it is both vegetarian and vegan

Polenta slices sauteed in olive oil
Spaghetti Squash - top both with a high quality tomato sauce - I use Paul Newman - or make your own
Tossed salad with avocado, red onion, tomato and mushroom slices and sweet peppers.
Vinaigrette - home made or dressing of your choice.
