Boil two pans of water. In one place 40 grams of brown rice and 10 grams of amaranth per person. When the water's boiled, simmer the rice and amaranth for 25 minutes, stirring occasonally.

In the other pan, once it's boiled put 30 grams of red lentils in 5 minutes after you've started cooking the rice and amaranth with a remaining cooking time of 20 minutes. Simmer and stir occasionally.

Meanwhile, quickly peel and chop a carrot, an onion, a clove of garlic and some broccoli. When there are 10 minutes remaining in cooking time drain the water from lentils, then put the pan on the table.

Open a jar of ready made curry sauce (you should use a high quality one) and put in 1/3 of it. You don't need that much of a sauce because as it cooks it expands a lot.

Stir in with the lentils, then pour in the chopped veg and stir more. Now boil the mixture and when it's bubbling simmer on a low heat for the final 10 minutes of cooking. Add a bit of black pepper for more taste.

This meal is better than the traditional lentils and rice meal. While that traditional meal has a complete protein for vegetarians with the combination of lentils and rice, adding the amaranth reduces your cholesterol and blood pressure, includes lots of calcium and iron and also adds a lot more protein to your meal.
