I'm one of those that eats mostly the same thing almost every day:

Upon wakening: Small glass of prune juice with Miralax. Not the healthiest thing, but it's something I need if you know what I mean.

Breakfast: Bowl of hot oat bran cereal with 1 tbsp almond butter and 1 tsp pure maple syrup. I also have with it a protein smoothie with rice protein powder, almond milk, power green powder, blueberries, strawberries, pomegranate extract and a banana.

Lunch: Usually a baked potato, baked sweet potato or brown rice veggie burger with mixed green salad. On the weekends I have eggs & hash browns (so I am not a true vegan, but mostly plant-based).

Dinner: Bean & Jasmine rice tacos on 2 white corn tortillas with avocado, rice cheese and salsa.

I want to look through this thread to get some more ideas though. It's kind of hard when you are on a gluten-free, plant-based diet to find more ideas

I have mostly rice/beans/potatoes/wheat products. Also, don't forget non-starch veggies!

I am not vegan. Can't give up my cheese. I also eat organic, cage free eggs.

I start the day with steel cut Irish oatmeal, fruit, Earl Grey Tea with agave.

Lunch - usually a salad if I'm home.
