A large group of friends had a vegan dinner yesterday. Some of us are vegetarian, some vegan, and a few friends brought their carnivore spouses or children, but the rule was vegan food only!

All the recipes came from the book The Kind Diet. From appetizers to salads to main courses to desserts, all the food was incredibly delicious.

After an evening of sharing recipes, cooking tips and a dicussion of the reasons for a vegan diet, we have all resolved to become vegan. I have been vegetarian for many years, attempting vegan several times, but now I am convinced that I need to go completely vegan.

An excellent suggestion for the New Year. I used to have the "Moosewood Cookbook" which was vegetarian, but not vegan.

I just don't understand people who say they are vegan, and eat peanut butter sandwiches, and pasta with marinara sauce. While that is a "vegan" diet, it does not seem to be very healthy.

Thank you for the suggestion on the cookbook. I have a new cookbook, "cooking for eye health", and it is primarily vegetarian, and discusses different vegetables, and the nutrients in them. It also does have a section with fish recipes...so it is not really vegan or vegetarian. But, very interesting about the various nutrition of vegetables and fruits, in relationship to maintaining health.

A vegan past dish is 100% vegan only when the pasta doesnt contain any eggs .
