I have dabbled in vegan eating before for health purposes but was never able to stick it out. I had a major surgery back in May and now my body doesn't seem to be able to handle meat and dairy. It causes so many problems and discomfort when I eat it now. I don't know if I'll be able to go back to them later. I'll be honest, I'm going to miss the meat and dairy greatly but it's not worth the problems it causes when I eat it right now. I'm still healing from complications. I'm trying to stick to only beans, grains, nuts, fruits and veggies. I don't want to do a lot of processed food. What is the best vitamin to take? I don't want to take a million of them and I need one that isn't expensive.

If you stick to a low-fat, starch heavy diet supplemented with fruits and veggies you'll do just fine. So long as your diet is diverse, you won't need any vitamins with the exception of b12. As insurance, just take a 2000 mcg b12 supplement once a week.

It was some time ago, but I was not able to eat the standard American diet for three to four months. After I was off of the IV's, I was put on a liquid for weeks; I was allowed to consume all of the tea, broth and Jell-O that I could hold. I graduated to a soft diet which consisted of soup, the occasional scrambled egg, apple sauce and any sort of squishy food that anyone could think of. I was living in a post flood disaster area at the time so there was not a lot of choice.
OK, not eating meat is not the end - I've lived as a vegetarian and a vegan. Can you tolerate chicken, fish? Can you eat a salad? If not, try a salad of wilted baby spinach. If you are going to eat any dairy, stick to cultured dairy products like yogurt. Soup was my friend. It seems that I could eat almost anything as long as it had been cooked for a looong time.
Pasta, especially the whole grain or whole wheat, is another choice for you to consider. You can use a meatless sauce with it.
