Hi - My husband and I are going to try to incorporate 2 days of eating vegan per week. I've looked at Amazon at the various best selling vegan cookbooks out there. I have celiac disease (no gluten) and my husband is diabetic - the main thing I am looking for is tasty healthy, low fat, mostly vegetables, legumes, tofu, maybe some dairy, etc.

The cookbooks I am looking at on Amazon seemd to have lots of space devoted to caloric desserts and baked goods which I am not interested in.

Any suggestions?

My favorite is The Kind Diet. Several of my friends used it to begin a totally vegan diet. Then they started inviting others to their home for vegan meals, all were recipes from The Kind Diet. We all bought our own copies of the book (from Amazon) and now nearly everyone in our group of friends has become vegan.

The rest are vegetarian and working toward a vegan diet.

The Anti-Inflammation Diet And Recipe Book, Jessica Black (gives all manner of food replacements to accomodate the things you have to avoid; mostly but not entirely vegetarian and vegan)

Oh, and beware Issa Chandra Moskowitz; her food is vegan and delicious, but very heavy in gluten, sweets and fats.

I have a Kindle, and have downloaded several FREE vegetarian cookboooks...I did pay for one recently, it was on making veggie burgers, and I really like it. Not sure if it is gluten free though.

Oh - I have a Kindle Fire - I'll look into that - thank you everyone for the suggestions. We have non-stop company until August 18.....at that point, we will devote 2 days a week to eating no meat or fish....if we like it, we will extend it to 3 days. We will keep some dairy though. Thanks everyone for your help.
