Has anyone portioned out left over Tofurky and then put in freezer? I'm the only one that eats it and can't eat the whole thing. I'm not really into eating it for several days so any suggestions? I thought about cooking, slicing and then freezing for future meals but don't know how that will change the taste.
I don't see why it couldn't be frozen as long as it was handled properly. I've never needed to do it because when I make a Tofurky roast, it's generally gone within three days.
If you slice it thinly, it can be used on a sandwich. I like it with some of the stuffing and cranberry sauce on bread.
Without the dressing, you can dice it, add mayonnaise vegan or not, minced celery, carrots and onions for a tofurky salad.
For a different flavor, if you are sick of the whole Thanksgiving taste thing, add curry powder and a couple of spoonfuls of crushed pineapple and some walnuts.
I wouldn't freeze it for longer than one week, though; after it's been defrosted.
